Mashed Potato Casserole

12 med potatoes, peeled, cooked and hot
1 8 oz. pkg. cream cheese, room temp
1/2 stick butter
1/2 C sour cream
2 eggs, slightly beaten
1/4 C finely chopped onion (optional)
1/2 C milk
1 t salt
dash pepper (optional)

Mash potatoes in large bowl. Add cream cheese in small pieces. Add butter. Beat well till melted and completely mixed. Mix in sour cream. Set aside. Combine eggs, onion and milk. Add to potato mixture along with salt and pepper. Beat until light and fluffy. Place in greased 9" round casserole. Bake in preheated oven at 325 to 350 degrees. (45 min. at 350 or 60 min. at 325.) Heat through till lightly browned. Serve with gravy. Serves 8-12, 20 or more if doubled. Can refridgerate for several hour or overnight.

We always make this recipe for Thanksgiving and Christmas Eve, because you can do it the day before... saves on your stress at the last minute. They are delicious!
