Ingredients
3-4 Chicken breasts
1 can green enchilada sauce (We like Hatch's but it is definitely spicy)
1-2 cans cream of chicken soup (more if you don't like it as spicy)
Put chicken breasts in crock pot. Mix green enchilada sauce and cream of chicken soup and pour over. Cook all day
Serve with rice and cheese and black beans, or whatever else you like. It also shreds and freezes really well. You can use red sauce for a different taste, too. I have used frozen chicken breasts before and just cooked it longer---I'm sure there's some kind of health code about not putting frozen chicken in the crockpot, but none of us died...
